La Cúpula Restaurant & Bar
La Cúpula Restaurant & Bar, the gastronomic heart of The Palace, is located within the hotel’s iconic glass dome and wrought iron structure. This vibrant all-day restaurant and cocktail bar is a popular meeting place for both guests and locals. While honoring its historic character, the space features contemporary touches like Castilian leather stools, curated artwork, and bespoke 16th-century tapestries. The menu masterfully blends the hotel’s rich culinary traditions with a modern twist on classic recipes. Standout dishes inspired by past guests — including Pablo Picasso’s Waldorf Salad and Julio Camba’s Steak Tartare — celebrate local ingredients and culinary legacy in every bite.
27 Club
Housed in the former Museo Bar, 27 Club pays tribute to the poets of the Generation of ‘27 who once frequented it. Known as a living museum, the bar showcases original guest books and a unique collection of over 70 illustrations by Lázaro Rosa-Violán’s team, inspired by the hotel’s archives. The cocktail menu revisits classics from the Pre-Prohibition and Prohibition eras with a contemporary flair. Signature drinks include the 1912 John Collins, Whisky Sour 1927, Old School (a twist on the Old Fashioned), Caribbean Cocktail Champagne, and the refined Negroni named Un Americano en el Prado.
